Italian-born, 34 years old, Chef Mattia Stanchieri has spent almost 20 years inside a kitchen. His very colorful and adventurous career has taken him from the best Michelin-starred restaurants in the world, like Geranium*** (2022 first in the world by 50best) in Denmark, Da Vittorio*** in Italy, and Belcanto** in Portugal, to owning his own restaurant on an island in the Bahamas and cooking for celebrities like Kanye West amongst many others.
At the age of 15, he realized he was passionate about cuisine and exploring the endless possibilities of combining various techniques and flavors. He started his journey in Monza, Italy, where he was born, and quickly gained experience in Michelin Restaurants, including Osteria del Pomiroeu* and Da Vittorio***. After that, he worked for five years as Head Chef of Osteria La Lira, creating several iconic menus based on traditional Italian cuisine.
At 27, he decided it was time to explore the world in search of new challenges that would give him the exposure to take his cooking skills to the next level. He took on the kitchen of a boutique Hotel on the island of Exuma in the Bahamas.
Little did he know that his experience on this tropical island would last five years, earning him a small restaurant and a catering company that would introduce him to several celebrities and eccentric individuals from across the globe. He became obsessed with exploring different cuisines of the world through meeting all these international clients who were eager to get a unique experience.
After the pandemic, he decided it was time to return to Europe to experience firsthand the best of the culinary world. While working there, he moved to Copenhague to work in Geranium***, where he witnessed the restaurant become number 1 in the 50 best.
In 2023 he moved to Portugal with a very clear project of opening a fine dining restaurant that would showcase his international experience. Yet, as a landing experience, he joined Restaurant Belcanto** for a few months to further understand the highest level of Portuguese cuisine.
This project, Vibe, has 17 years in the making, and it is a love story of food and cultures that portrays Mattia’s admiration of cuisine across the globe.
