A new beginning
Every chef has a story, a moment that changes how they see food.
For me, that moment didn’t happen in a busy city, but on a small island in the Bahamas. I was cooking for tourists, and honestly, I was tired. So I took a chance and sent an email to the 50 best restaurants in the world. Ten of them replied, and one led me on a journey to a place that redefined everything I knew about cooking: Geranium in Copenhagen.
That experience taught me the soul of New Nordic cuisine. It’s not about complex sauces or extravagant techniques. It’s about honesty. It’s a philosophy where the best ingredients are given the chance to speak for themselves, with nothing to hide behind. Every dish is a reflection of its environment and its season.
This is my personal story and my interpretation of that philosophy.
I’m not in Copenhagen, however. I’m here in Lisbon. And I quickly realized that the same philosophy of finding the finest ingredients and letting them shine can be applied anywhere in the world. This chapter is my love letter to Portugal. It’s my Geranium inspired vision, filtered through the extraordinary produce of this country, from the sea to the mountains and everything in between.
We are pleased to accommodate allergies to nuts, gluten, and seafood.
Please note that, for this menu, dairy modifications are unfortunately not available.
Our smaller tasting menu is vegetarian-focused, and guests may choose to substitute the main course with a protein option, upon request.

If you anticipate being late, please notify us promptly, and we’ll make every effort to accommodate you. Otherwise, we’ll hold your table for 15 minutes, after which your booking may be considered a no show.
To ensure a comfortable experience for all our guests, tables are reserved for a maximum of 2 hours.
For bookings over 6 people, please contact us directly through Whatsapp at +351 965 522749. A deposit is required to secure the table for group bookings.
We’re happy to provide allergen-friendly alternative menus upon request. When making your reservation, please let us know about any dietary requirements, food allergies, or intolerances. Your advance notice allows us to tailor the dining experience to your needs. Please understand that due to space limitations for food preparation, we may be unable to guarantee menus for severe allergies like celiac, dairy, seafood, and others.
Suggested 10% service charge will be added to your bill.
Unfortunately our restaurant cannot welcome dogs due to the open layout of our kitchen.
